The Story of the Beans: These beans come from Cafe Monte Jack, two neighboring farms in Colombia, who combined forces to develop the best agricultural practices and explore innovation in coffee. We work with Juan & Andriane who are just awesome people. They welcome you like family from the very first minute. Their farms are located on a beautiful hillside in the Northern Andes, with a view of the local volcano “Nevado del Ruiz” on a clear day. (Check out the B&W photo).
The Flavor of the Beans: The high elevation of 5,700ft and rich volcanic soil gives these beans flavor notes of chocolate & floral. WASHED COFFEE, is one of the three processing methods used, meaning that the beans were de-pupled from its cherry fruit & washed the surrounding mucilage. This has the “cleanest” taste on the coffee spectrum. It’s been said that if you like white wine, you’d enjoy this processing method best.
